BAY VISTA opened in January 1991.
At a time when Brighton Le Sands was just a seaside suburb with a few other eateries & a few local shops. By February 1991, BAY VISTA was on everybody’s lips, literally! It soon became known not only for it’s happening atmosphere, but for it’s huge menu, generous portions & of course it’s famous desserts.
Open till late, BAY VISTA instantly became an institution & a prominent member in the local community, helping & supporting local businesses, charities, fundraisers & events.
It’s ‘happening’ atmosphere helped Bay Vista become one of Sydney’s most loved and talked about places. With late night trading and full menu availability until closing, the many patrons (from all over Sydney and afar) were guaranteed satisfaction before going to bed, whether after a night out or finishing the ‘late shifts’ from work. Apart from offering fantastic food, it was Bay Vista’s desserts that made it famous. Ice creams, pancakes, sweet crêpes, waffles and a huge selection of cakes is what put Bay Vista on the (dessert) map!
By 1994, it was time for a change. It’s original ‘50’s 60’s American Euro diner’ feel & concept had become tired & a renovation was due. An artist was commissioned to paint modern ‘Grecian’ paintings, along with new furniture, booths, bar & general internal finishes.
After closing for a few weeks, BAY VISTA was back. And the lines out the door were back. It’s fresh new interior bringing new life back into the business.
So, with a only a few downs but mostly ups, BAY VISTA moved into & beyond the new millennium full steam ahead, still serving it’s famous menu items…..all day & all night, making it still (after nearly 18 years) a favourite for all & for all ages.
By 2009, it was time for that change again, although this time BAY VISTA was thinking BIG! After many months of debate & heartache, the decision was made to commission a new renovation on a bigger scale, not only transforming the space into a state of the art venue, but also the concept – well the rest is history!
With a few mistakes along the way & taking the term ‘take your time!’ a little too far, the new BAY VISTA was eventually re-born, re-named & conceptualised as: BAY VISTA DESSERT BAR & CAFÉ.
The focus here was to get back to our ‘dessert’ roots, making this the ‘hero’ of the store. We dropped the ‘heavy’ food lines & stuck with the ‘snack’ food – crepes, paninis etc.
Today, although a little different from the BAY VISTA of the 90’S, BAY VISTA DESSERT BAR & CAFÉ is still committed to providing a quality product to all, till late, every day of the year.
